The Flying Biscuit Café signs Katy lease, expanding in Houston market

An all-day breakfast and lunch café is coming to 1660 S Mason Rd in Katy, where franchise partners Mario Harper and Ifeoma Harper have signed a lease for their first The Flying Biscuit Café. The café is targeted to open in late November 2026 and will join five Flying Biscuit cafés already open across the Houston area, with two more Texas cafés in development, the company said in an October 2 announcement.

Katy is the next step in a market the brand has been building out for years. A sixth Houston-area café opens in Magnolia next, which will make Katy the seventh in the market once its doors open in November.

The Harpers were drawn to Katy’s sense of community and its growing, diverse neighborhoods — an area they describe as welcoming and full of people who appreciate good food and a warm, local dining room. They are also looking forward to building relationships with local community groups across Katy

"We chose this location in Katy because it’s a highly visible, convenient spot that’s easy for families and neighbors to reach — making it simple for guests to drop in for breakfast, brunch and those ‘just one more bite’ moments in between," said Mario Harper. The Flying Biscuit Café in Katy will offer full-service catering, for team breakfasts, school events and family gatherings. serving breakfast and lunch daily. The menu includes stuffed French toast, shrimp and grits, omelets, vegan scrambles, burgers and wraps, and the café will have a full bar with brunch-forward cocktails.
